Trip for family of 5 to Korea

Hi, we are a family of 5 with 3 kids (ages 11,9 and 7) and are keen to visit Seoul and Jeju Island for 8 days around 3rd week of Decemer this year. Any good recommendations for places to visit for 8 days? We had gone hiking,horse-riding , white-water rafting and canoeing on our last holiday in the Canadian Rockies during the summer month this year. Is it easier to get around by public transport or to rent a car with kids along ? How about language barrier , is English widely spoken here ?

Would appreciate a lot if anyone would give me some good ideas.
